    I would like to recommend my all time favourite cookbook: "Vegan with a Vengeance: Over 150 Delicious, Cheap, Animal-Free Recipes That Rock" by Isa Chandra Moskowitz

    Some great recipies in there and it feels quit like a zine with snippets of text and images etc added to spice things up, also if you are a fan of (extreme) metal / hardcore then each recipe has a listening recommendation :D love the feel of this book, it has loads of character.

  • The New Farm Cookbook

    While, not an outright Vegan Cookbook, per se...these hippies were way ahead of their time. I consistently have used these simple recipes over the last 15 years. It's the one cookbook I come back to time and time again. All the recipes are easily modified vegan, if they aren't actually vegan to begin with.

    I really like 'The Balanced Plate' by Renee Loux...she takes an approach of using whole foods and seasonal, organic fruits/veggies when possible. The first part of the book is really interesting because she discusses all kinds of issues pertaining to food such as pesticide use and genetically modified food. She also talks about when certain veggies/fruits are in season, different cooking styles & good oils/spices to use. I've cooked a lot of recipes from this book and I would say 80% of them have been awesome. My favorites are definitely the muffins. She has a recipe for Banana-Walnut muffins that I make practically every week! This is a cookbook geared for vegans who place a high importance on healthy eating.

  • Vegan Planet has lots of creative recipes I never would've thought to make, and most are healthy enough. You won't find many greasy veg junk food recipes in here, and that's why I like it.
    Also, I don't think any of them require a food processor or expensive cooking equipment. I love it! One of the few cookbooks that's actually been worth my money to own. (:

    A lot of people here are recommending books by Isa Chandra Moskowitz, if you liked her books you should check out her television cooking show that aired like 6 years ago. "Post Punk Kitchen" it's since been canceled.

  • Alternative Vegan is a cookbook that teaches you how to make vegan food without substitute products.
    Revised version of
    Vegan Freak book is now available, I think you recognize many situations when you read this :) And authors are really funny.

    The Vegan Cookbook-Alan Wakeman and Gordon Baskerville. Been using it for 20 years, it fell apart in the end, so I got another one. :)

  • The Robin Robertson books are all pretty good (mostly healthy, mostly easy, mostly available ingredients). My favorite would be 1000 Vegan Recipes - its sort of the magnum opus of her cookbooks, and the closest thing to a vegan Joy of Cooking to date.

    As for most accessible for cooking vegan for omnivores, I like Donna Klein's The Mediterranean Vegan Kitchen, which is sort of a classic by now.

    As much as I like Isa Chandra Moskowitz (and her PPK forum: http://forum.theppk.com/, most of Veganomicon's recipes are a bit too time consuming for my daily fare.
